淺談烹飪職業(yè)教育中全面素質(zhì)的培養(yǎng)

摘要：職業(yè)教育是教育與經(jīng)濟(jì)的重要結(jié)合點(diǎn)，是把人才資源轉(zhuǎn)化為智力優(yōu)勢(shì)，把智力優(yōu)勢(shì)轉(zhuǎn)化為現(xiàn)實(shí)生產(chǎn)力的重要橋梁，是培養(yǎng)初中級(jí)技術(shù)人員、管理人員、技術(shù)工人和城鄉(xiāng)各行各業(yè)熟練勞動(dòng)者和提高全民族素質(zhì)最直接、最有意義、最迅速的途徑，是振興當(dāng)代經(jīng)濟(jì)的重要措施。烹飪職業(yè)學(xué)校培養(yǎng)的畢業(yè)生素質(zhì)如何，是否能夠順利頂崗生產(chǎn)，這是職教別于普教的重要標(biāo)志，是檢驗(yàn)職業(yè)學(xué)校辦學(xué)質(zhì)量的重要依據(jù)。學(xué)生的技能形成是職校教學(xué)的根本目的。合理安排訓(xùn)練項(xiàng)目，使技能訓(xùn)練貫穿教學(xué)始終；嚴(yán)格執(zhí)行六字操作教學(xué)法，及時(shí)加強(qiáng)技能訓(xùn)；遵循技能形成規(guī)律，提高技能訓(xùn)練效果；不斷完善實(shí)習(xí)條件，增加訓(xùn)練基礎(chǔ)；培養(yǎng)具有全面素質(zhì)烹飪專業(yè)學(xué)生，以適應(yīng)社會(huì)的需求。

Abstract：Vocational education is educated and clicked with economic important combination, turn talent resources into the intelligence advantage , turn the intelligence advantage into the important bridge of realistic productivity, train the intermediate technical staff at the beginning, administrative staff , skilled worker , in urban and rural areas all trades and professions skilled labourer improve the whole nation’s quality directly , most meaningful , fastest way most, it is the important measure of revitalizing contemporary economy. Cook how it will be graduate quality that vocational school train , can take post production smoothly, this it is duty that is it leave important sign of PuJiao Yu to teach, examine vocational school run a school the important basis of quality. Students’ skill forms the basic goal that is teaching of duty school. Arrange the training course rationally , make the skill train and run through teaching all the time; Carry out six words and operate the teaching method strictly, strengthen the skill to train in time; Follow the skill and form the law, improve the skill and train the result; Perfect the condition of practising constantly, increase the foundation of training; Training has overall quality to cook professional students, in order to meet the demand of the society.
